Cold extraction/ Mechanical methods

Cold extraction is the process of olive oil production when during this process the temperature inside the production machines doesn’t exceed 27οC .

This is extremely important because this is how the most precious and nutritious olive oil can be produced. This happens because the quality of the product is not affected by higher temperatures. Taleon extra virgin olive oil is solely produced by cold extraction methods preserving its rich taste, aroma and colour. Also, its acidity remains low while the important antioxidants, like vitamin E and polyphenols are not destroyed.

The mechanical methods are the most natural and pure since they include only the processes of defoliation, washing, the breaking of the olives, kneading and centrifugation. No other method can give a more pure and virgin product directly from nature to our table.
