The olive orchard is carefully assessed so that the perfect characteristics and weather conditions are set, since they affect the condition of the olive trees and consequently that of the final product. For fertilizing, they are used green manure, compost, processed seaweed, ashes and wood residues. Sometimes it is needed to use small quantities (allowed by the E.U. regulations) of phosphorus or potassium. Pruning and watering contribute greatly to the better yield of the olive trees.

In organic farming pruning is one of the most important and necessary tasks since they ensure the fruition and the long-life of the olive tree, the renewal of the trees, the avoidance of the diseases of the tree, the better handling with the “enemies” of the tree and the easier harvesting. The protection of the trees in organic farming aims at preventing and avoiding the diseases that can harm the tree and presupposes carrying out only the necessary interference by the human factor. Only when it is absolutely necessary, organic fertilizers are used. All these contribute to the respect of the environment as well as to the production of a pure product.
